Tonight I went with a professor and a few fellow classmates to a Zen Sangha (I think that might be how it is spelled) for some meditation.
It. was. awesome.
Since I've been having some back and forths lately about my own spirituality, it was convenient to take some time and experience it in a different way. It was a whole new level of being. Which I always thought may or may not be a crock of shit.
So, I've decided to do some more reading and perhaps some introspection to figure out exactly how this whole spirituality thing functions and even somewhat the validity of it all.
After meditation, we went to a restaurant on High Street called "Gold Star"... YUMMMMM!
It was a vegan-friendly cafe with teas and wraps and the best damn veggie burger I've ever had. I wanted to snap a photo of it, but I was with a bunch of people we'd only just met that ate at said restaurant almost every week. So I refrained. BUT... the secret of this black bean rice veggie burger was beets. Yes, BEETS. It was so flavorful and had an awesome texture. However, the sandwich as a whole was slothered with mustard, and since I don't like mustard to begin with, I ended up demolishing the sandwich and just eating the burger and the pickles. I would definitely eat there again. Its whole menu can be made vegan if you ask. What a change of pace....
I've been enjoying my stir-fry with chick'n and ravioli with TVP spaghetti sauce for my lunches this week. I have to eat out on Thursday, so that may be a bit of a challenge, but so far this week I've eaten completely vegetarian and pretty damn close to vegan. Yey!

Hey, I don't check your blog for a bit and it explodes with posts? What's up with that?
Ahh, beets in veggie burgers...I have been experimenting with a recipe like that. Will have to try again. :)
P.S. The meditation sounds cool. That is why I like doing Yoga. :)
